We are excited to announce that Salta La Vecchia extra virgin olive oil 2021/22 est arrivé!
This year we have revolutionized the way we produce the oil. We were the first on the island to start harvesting as early as 20 September.
For the pressing, we used a small oil mill in the Monastero valley, 5km kilometres from our olive grove. In this way, we have shortened the production chain by bringing the olives to the mill within 4 hours of harvesting.
Early hand picking has given us, in exchange for a reduction in quantitative yield, an intense green oil, very fragrant, a little spicy and with an imperceptible acidity.
